Happy Birthday Relief Society

Mark your calendars now. March 18, 2010 will be our next RS meeting. We will meet at 6:30 pm for a fun birthday party. Sign up sheets will go around Sunday for table decorating and cake making. We will enjoy and evening of fun games and friendship as well as learning about the history of our great Relief Society organization. Make sure you pick up a brown paper bag to bring with you that night. See a member of the presidency for those. They will be handed out the first sunday in March.

easy vegi pizza

I was asked to post my super easy vegi pizza. This is great for a quick meal that is yummy

2 pkg crescent rolls (pillsbury or equivelent) (if you want to make a smaller pizza, use one package)
1- 4 oz cream cheese or whipped cream cheese. You can use a flavored cream cheese like chive and onion or mix seasonings into your plain cream cheese
chopped vegis of your choice

Take a jelly roll pan or cookie sheet and spray with non stick spray
Roll out crescent roll dough onto pan so it forms a big rectangle covering the bottom of the pan, this will be your crust
Bake, according to directions for crescent rolls ( think it is 375 for about 8 min or until golden brown)
Let crust cool.
In bowl, you can whip your cream cheese and add seasonings. I add dill and garlic salt. You can also buy the whipped cream cheese that is flavored and use that.
spread cream cheese over crust and top with chopped vegi's of your choice
I use fresh broccoli, peppers, olives, cucumbers, artichoke hearts, etc. you can add a bit of shredded cheese if you like.
cut into squares and serve. YUMMY!

Upcoming Events

We have a few upcoming events for you to put on your calendars
1. Feb 27th is going to be the sister appreciation/sweethearts dinner
This will be at the church and is for adults only (17 and up)
Sister Elliott is coordinating the table settings with the sisters and the priesthood brethren will be doing the meal.
We are excited for this event

2. March 18th will be our next Relief Society Meeting. This will be a birthday party for the Relief Society organization. Please plan to attend a fun night of games, door prizes and fun. 7pm at the church

January 30th Relief Society Activity

Sisters
We are pleased to inform you that there will be a nursery class for our upcoming activity on January 30th.
So just a quick review
What: Relief Society "All you need is love" Activity
Time: 10 am -2 pm
A potato bar lunch will be served
Classes
1. freezer cooking : come learn how to put together a months worth of meals and prep your food ahead of time, with just little effort. We will be making a lasagna that day for you to take home. If you wish to make a lasagna to take home the cost will be between 5 and 7 $ We will have cost and sign up sheet go around on sunday.
2. Candy making- we will learn about making and dipping candies--yum
3. Bread in a bag- this cute demo will show you how to make bread dough in a bag. (ziploc) a great and fun thing to do with kids or grandkids or to do if you don't have a big mixer etc. This is fun to do camping as well. We will show you how to do it and if you want to make some as well we will have a sign up sheet for that on sunday as well. There will be a small cost for this if you want to make it to cover the flour and yeast etc.
4. Cute gift box/containers that you can use for any occasion. We will be making some for Valentines day. A sign up sheet will come around sunday for this as well.

Up and Coming

Mark your calendars now for our Saturday, January 30th "All you need is Love" classes and lunch. We will feature 4 classes on breadmaking, freezer cooking, candy dipping and making a cute, decorative box container to give treats or gifts in. We will also have a potato bar lunch that day. We are working on child care and will post more information on that later.
We can't WAIT to get together and socialize, learn and play together!

December Relief Society Meeting Recipes

We have had lots of requests for the recipes from the December Enrichment Night, so I thought I would post them here.

Marvelous Chicken Cassarole
1. Line a 9x13 pan with boneless, skinless chicken breast (you can use tenders and also cubed chicken)
2.Place a slice of cheese on each chicken breast (or cover all chicken with sliced cheese) I use swiss.
3. Mix 1 can of cream of chicken soup with half a can of water and half a can (about 1/2 a cup) of sour cream. Mix well
4. pour HALF the soup mixture over the chicken and cheese. Then shake on HALF a box of stovetop or other quick stuffing mix, on top of the chicken, cheese and soup.
5. Pour remaining soup mixture over the stuffing
6. Top with remaining stuffing. If you have not opened the seasoning packet, do it at this point and shake over the top. If the stuffing is premixed with the seasoning packet, that is fine, too.
Cover and Bake at 350 for 1/2 and hour. Reduce temperature to 325 and bake for 30 more minutes. It will be light and bubbly! YUM

Green Salad with Almonds and Orange
1 large head of lettuce (or a bag of mixed field greens of your choice).
1 small jicama, peeled and julienned. (if you can't find jicama, just omit it)
1 sm red onion, sliced
4 oz almonds, 1 (11 oz) can mandarin oranges 3 TBSP sugar

place first 4 ingreds into salad bowl.
In small skillet, sprinkle sugar over almonds and cook over med heat until almonds are coated and the sugar has dissolved (stir)
Cool in small bowl
Toss salad with almonds and orange dressing and serve
ORANGE DRESSING:
1/2 tsp grated orange rind 1 Tbsp Sugar
1/3 C orange juice (if you like it with more orange flavor dont dilute the OJ concentrate down as much)
1 TBSP good seasoning DRY italian dressing mix
2 T red wine vinegar ( I used 2 T raspberry walnut vinegrette salad dressing instead)
1/2 C vegi oil
mix well and pour over salad
